Signature Desserts: The Golden Moon

We are excited to reveal an irresistible new dessert menu created by Group Executive Chef Damien Brassel who has worked at, and even owned, a number of Michelin star restaurants.

The star of the new dessert menu, The Golden Moon, is both interactive and highly instagrammable. The Golden Moon takes around 90mins to create and is set to be Sydney’s new must-try dessert this autumn. Complete with hand-painted golden details, decedent flavours of white and dark chocolate, mascarpone cream, berry gel and coffee sauce, all ingredients are made in house by the resident Pastry Chef from start to finish. The Golden Moon is finished at your table as the waiter cools the chocolate sphere with liquid nitrogen. The Moon is then cracked with a spoon to reveal the treats inside (tip: ask to do this part yourself for fun!) and finished with a silky coffee sauce.

Another new dessert sure to stand out is the Chocolate Sunset. With its chocolate disks imitating the stunning sunsets that can be seen from Café del Mars around the world, the Chocolate Sunset is an indulgent combination of milk chocolate mousse, salted caramel and roasted almonds.
Those with a savory tooth can’t go past the selection of Spanish and French Cheeses with quince and honeycomb, paired with a glass of port or dessert wine.

The 4 new desserts come as part of an all new menu and new food direction for Café del Mar under the guidance of the talented new Executive and Head Chefs.
