Our Chefs.

Our menu is developed by Café del Mar Australasia’s Executive Chef, Damien Brassel, who has over 20 years’ experience and who has worked in some of the best hatted, 2 and 3 Michelin star restaurants in Australia and around the world.  Brassel also went on to own and operate his own award-winning, Michelin Star restaurant in New York City, ‘Knife & Fork’.

At the head of the Sydney pass, Head Chef Peter Hutchinson leads the team, bringing decades of experience having worked around the world, including under Peter Gordon at the famed Sugar Club in SOHO, and going on to discover new food styles in New York and Miami, and as Sous Chef at Sydney fine dining favourite, ARIA restaurant.
